Trying to get rid of the last of the Thanksgiving turkey?

Ok we’ve had turkey sandwiches right after Thanksgiving, then I made turkey soup and had that for a day or two and I still have some turkey left.  Here’s a little twist on leftover turkey.  Make turkey salad.  It’s a good way to use the last of the turkey, especially the dark meat which my family doesn’t really like as much.  This twist gives the turkey salad a little bit of zing!

1 lb chopped turkey
1/4 c chopped onion
1/2 c pickle relish
1 cup mayo
2 TBS basil pesto
1 tsp lemon juice
salt and pepper to taste

Mix all ingredients together and serve as a salad on a bed of lettuce or in a sandwich.
